The uglier the better [in my kitchen].
Yesterday I spent most of the day, alone, in the kitchen while Elizabeth & Alexandre played at their grandparents.
I transformed these 8 ugly bananas into a double batch of oatmeal/whole-wheat banana muffins and these banana-date ‘cookies’ that have no oil and no sugar (they’re more like muffin clusters than cookies I would say).
Then I decided to finish off the dates with this coffee & date loaf with Almonds. It’s so delicious, although should have had less sugar. I put half the sugar it calls for and I should have put way less. Dates are SWEET! (not pictured, imagine?)
Then I went on to make accidental white-ish bread — because once again, I bought the wrong flour. A lesson learned in needing to slow down when grocery shopping. I bought this flour (sifted bread) instead of this flour (whole wheat bread) and I didn’t realize it until I was kneading the dough! It was delicious bread — I added a heaping tbsp of quinoa, sesame seed, hemp seed, oats and ground flax — but I should have at the very least doubled those quantities. Next time.
Because I had nice fresh bread I decided to make soup for dinner – a red lentil soup that is going to be a new staple soup in our home. I modified it a bit in that I added red curry paste, a few carrots & celery stalks and I cut the lemon juice by half maybe.
and last but not least, we tested out Adam’s father’s day gift — an ice cream maker! I think it was the best Ice Cream i’ve ever had — but then again, i’m much more of a frozen yogourt kind of girl anyways. It was delicious — and we can’t wait to play with recipes!
Today is calling for crazy hot + humid — so I’m thinking there will be no baking/cooking — other than maybe more ice cream?
