Ultimate Comfort Food: Rhubarb Crisp
Nothing brings me back to being a kid like fruit crisp. Any kind of fruit crisp really — but my favorite is rhubarb. Rhubarb + Strawberry coming a close second.
I added a few strawberries and some sugar… the sprinkle of sugar on rhubarb always has me thinking “too much? too little? I need it to be tart… I don’t want it too sweet… but i would rather not go cross eyed at the bitterness either…” and it usually turns out just fine – although at times on the sweet side. Adam & the kids prefers it on the sweeter side!
topping: 1 cup of brown sugar, 1 cup rolled oats, 3/4 cup flour, 1/3 cup melter butter. Mix & spread over any fruit combination – bake for 20 to 25 min. at 350oF.
